A Fix + Co Smoothie Bowl

Last week we were thrilled to share a feature on a super cute juice bar in Toronto called The Fix + Co.  We interviewed the owners Tamara and Adrianna on what it's been like to open a juice bar, and Adrianna, a holistic nutritionist, shared her insight and advice for living plant-powerful. As an added bonus during our shoot they whipped up a simple smoothie bowl to foritify our photographer Lauren Kolyn—they've shared the recipe which you can now enjoy any time of day or night. VEGAN CHOCOLATE AVOCADO SMOOTHIE BOWL

Serves 1

INGREDIENTS

  • one frozen banana
  • one cup of loose frozen/fresh spinach
  • 1/2 avocado
  • one tablespoon of cacao
  • 3-5 pitted & soaked dates
  • 1/2 cup (plus a bit) granola (homemade is best!)
  • fresh mixed berries, nuts, cocoa nibs, shredded coconut, hemp/pumpkin seeds, etc.

METHOD

In a powerful blender, combine the banana, spinach, avocado, cocoa, and dates. Blend on high until smooth.

To assemble, place granola as the base layer in your bowl. Pour the smoothie blend over top, and garnish with additional granola, mixed berries and other toppings of your choice. Feel free to experiment!

NOTE: frozen bananas blend better providing a thicker texture; soaking dates before hand in warm water helps soften them so they blend better.
